ALIX'S TUNA PUFF

Serves 4.

Note: I found 6-ounce cans of tuna on sale for a dollar apiece, making the two cheaper than the 12-ounce can, so check prices as you shop. Cost per serving: $1.60.

• 1 sheet puff pastry, thawed according to directions

• 1 tbsp. or more Dijon-style mustard

• 1 (12-oz). or 2 (6-oz.) cans albacore tuna fish in water, drained, moisture pressed out and flaked

• 2 medium tomatoes, sliced

• Salt and pepper to taste

• 1 c. shredded Swiss or other similar cheese

• Sprinkling of Herbes de Provence, thyme, basil, rosemary or other herbs

Directions

Preheat oven to 400 degrees.

Roll out the pastry on a floured surface to fit a 9- by 13-inch pan, allowing for the edges to go an inch or so up the sides of the pan. Or place the pastry on a cookie sheet and crimp the edges all around so the filling doesn't ooze out.

Using a spatula, spread the mustard on the pastry. Evenly distribute the tuna. Cover with the tomato slices and sprinkle with salt and pepper if desired. Add the cheese and scatter the herbs on top of the cheese. Bake for 30 minutes or until the pastry is puffed and golden brown.
