Why not an ice cream pie? At this wildly popular newcomer, chef Sameh Wadi and his crew are turning out two varieties, both on graham cracker crusts. One features pecan-molasses ice cream with all kinds of salted caramel accents ($40), the other is a (vegan) spiced pumpkin ice cream with candied pepitas ($50). Order by Monday, and pick up on Tuesday by 9 p.m.

Baker/owner (and multiple James Beard award nominee) Michelle Gayer is all about pies, especially at Thanksgiving. Celebrate early on Monday — from 3 to 7 p.m., "or whenever we sell out," she said — when Gayer takes over Hola Arepa (3501 Nicollet Av. S., Mpls.) for a pie pop-up, selling chocolate cream, bourbon pecan, caramel-apple streusel and pumpkin chiffon varieties ($27 and $28). Or drop by to order for pickup (at her Midtown Global Market bakery) on Wednesday by 8 p.m.

Baker/co-owner Solveig Tofte is offering three pie options, all at $20: classic pumpkin, cider apple and malted pecan. Tofte hasn't forgotten that some Thanksgiving guests will want breakfast, so she's featuring cranberry cream cheese pastries, pumpkin turnovers, sweet potato- and chèvre-filled croissants, bacon-Cheddar biscuits ($3.25 to $4) and other seasonal a.m. delicacies. Order by Monday, and pick up on Wednesday by 3 p.m.
