Recipe: Pizza scones

PIZZA SCONES

Makes 18.

Note: From Cooking Light's "Way to Bake."

• 11/2 c. all-purpose flour (6.75 oz.)

• 11/2 tsp. baking powder

• 1 tsp. dried Italian seasoning

• 1/2 tsp. salt

• 1/4 c. chilled unsalted butter, cut into small pieces

• 1/2 c. shredded reduced-fat extra-sharp Cheddar cheese

• 1/3 c. turkey pepperoni, finely chopped

• 1/3 c. 1-percent low-fat milk

• Olive oil-flavored cooking spray

Directions

Preheat oven to 425 degrees.

Weigh or lightly spoon flour into a measuring cup; level with a knife. Combine flour with baking powder, Italian seasoning and salt in a bowl.

Cut in butter with a pastry blender or two knives until mixture resembles coarse meal. Stir in cheese and pepperoni. Add milk, stirring with a fork just until moist. (Dough will be slightly sticky.)

Drop dough by slightly rounded tablespoons onto a baking sheet coated with cooking spray. Coat tops of scones with cooking spray.

Bake for 13 minutes or until browned. Remove from pan and cool slightly on a wire rack. Serve warm.
