Polenta and Pork Ragù
Serves 6 to 8.

• 3 lb. skinless, boneless pork shoulder, cut into 3 pieces
• 1 tbsp. plus 1 1/2 tsp. kosher salt, divided
• 2 1/2 tsp. freshly ground pepper, divided
• 1 tbsp. extra-virgin olive oil
• 3 large shallots, finely diced
• 8 cloves garlic, minced
